Pure Pot Still Irish Whiskey

Pure pot still Irish whiskey is an earlier term for what is now commonly known as single pot still Irish whiskey. It represents a traditional Irish style produced at a single distillery from a mash that contains both malted and unmalted barley, distilled in pot stills and aged on the island of Ireland for a minimum of three years in wooden casks.

This style is produced by preparing a mash from a mixture of malted and unmalted barley, fermenting it, distilling it in pot stills and then maturing it in wood. According to the Irish whiskey technical regulations, pot still Irish whiskey must contain a minimum of 30% malted barley and a minimum of 30% unmalted barley, with up to 5% of other cereals permitted.

The key difference lies in the mash bill. Single malt Irish whiskey is produced from 100% malted barley, whereas pot still Irish whiskey utilises both malted and unmalted barley. This combination helps provide pot still whiskey with its distinctive spicy, creamy and textural character.

Because the terminology has evolved over time. The accepted modern category is single pot still Irish whiskey or pot still Irish whiskey, while pure pot still is an earlier term that many drinkers still know from historical bottlings and older whisky literature.

Pure pot still Irish whiskey is often recognised for its rich, full texture and a flavour profile that brings together orchard fruit, cereal notes, creaminess and a distinctive warming spice. The use of unmalted barley is particularly important here, as it provides both the spicy character and the creamy mouthfeel linked with the style.
